Take Elderberry Nectar straight. 2 teaspoons is all you need. Our syrup is rich and super concentrated with no water content. One 12-oz bottle lasts 4-5 weeks for the average adult. In our family, when feeling under the weather, we increase to three servings a day just until we are feeling better. Another fun and delicious way to take it is frozen as "bites". Drop by teaspoonful into ice cube trays and freeze. Melt on your tongue one cube at a time in lieu of dessert. So luscious!
Add 2-3 teaspoons Elderberry Nectar to a tall glass. Add stevia or additional sweetener if desired. Top with sparkling water, plain or flavored. Berry, cherry, lemon, hibiscus, tangerine or watermelon pair beautifully.
Add Elderberry Nectar to smoothies, yogurt, or fruit-based blender drinks.
Elderberry Nectar can be to any hot or cold water with ice to create a healthy, simple and delicious tea. It can be used simply, in this way, or paired with any number of other herbs: ginger, rosehip, lemon, and hibiscus and particularly nice.
We encourage you to experiment with adding elderberry concentrate to your favorite drinks. Add 2 teaspoons to 2 tablespoons, depending on your taste preference. May be added to juices, cocktails, beer, kombucha, and most anything else you can think of. It pairs nicely with bitters -- such as tonic -- as well as tart, tangy, flavors. Pomegranate, sour cherry, blackberries, hibiscus, and rosehips are some examples. We are particularly fond of pairing it with Fever-Tree Elderflower Tonic Water
Elderberry Nectar can be added to ice cream, yogurt, or applesauce... folded into dessert or cupcake recipes as well and will lend a beautiful hue of purplish pink to baked goods while giving you all the health benefits of this vital berry.
Add 16 oz. thawed elderberries to a large flat-bottomed pot and mash.
Add 2 cups of water and simmer for 20-30 mins, mashing again part way through cooking. Strain and press through a sieve with the back of a spoon to separate skin and seeds. You may further reduce the liquid for a more concentrated product. Freeze or refrigerate in a glass jar with tight-fitting non-lid. Will last 7-10 days. Add 2 tsp of raw, apple cider vinegar to extend shelf life. SAVE THE ELDERBERRY MASH! (see below.)
Follow the above recipe using the water extraction method. During the heating process add your choice of spices. Most popular are any combination of ginger, cinnamon, cloves, and/or star anise. Spiced elderberry concentrate may be left unsweetened or sweetened per instructions below to create a spiced "winter" syrup.
Follow one of the above recipes based on your taste preference. Once the mixture's temperature has dropped to lukewarm, add honey to taste. We recommend a raw, local honey for the highest quality syrup, once t(Raw honey is not recommended for children under 1 year old.) If choosing a granular sweetener, add it during the heating process. Alternative sweeteners may be used. Sugar and honey-sweetened syrup has a much longer shelf-life than do unsweetened or no-sugar options, such as stevia.
You can infuse whole elderberries to make hot tea, of course, but tea is also an excellent way to use the leftover mash. Add a couple of teaspoons of elderberry mash to hot water and infuse 10 minutes for hot tea. May also be added to a jar for longer, sun-tea brewing. Strain and enjoy with or without sweetener of your choosing. A squeeze of fresh lemon is also delicious.
We caution those foraging for wild elderberries (sambucus cerulea) against consuming berries raw.
